Wanted to do something special for Sandy. Just like that. For no reason. Just because he is special. Just because he is so thoughtful. Just because I love him so much. Just. He was travelling and I was meeting up with him a few days later. SO I decided to carry something sweet for him.

Apples for ages have been the temptresses tool. So, I too, picked an apple and got grating! I combined the sweet-tartness of apples with the sharp spicy kick of ginger and came up with this delicious cake.

Apple and Ginger cake with a Ginger glaze
Ingredients
Flour 2 cups
Baking powder 1 tsp
Baking soda 1/4 tsp
Pinch of salt
Sugar 1 cup
Refined oil 1/2 cup
Eggs 4
Vanilla essence few drops
Ginger juice 2tbsp + 2tbsp for drizzle
Apple, grated 1 cup, drizzled with lemon juice
Icing sugar 1/2 cup

Method
1. Preheat oven to 180 degrees C. Grease and flour a bundt cake tin or any eight inch cake tin.
2. Sift together flour, baking powder, baking soda and salt.
3. In a mixing bowl beat together sugar and oil. Add the eggs one at a time beating in between each addition. Add the vanilla essence.
4. Add the flour mix in three batches and beat well.
5. Add the apple and ginger juice and mix well.
6. Pour into baking tin and bake for thirty minutes or till done. Cool and remove from tin.
7. Prepare the ginger glaze by mixing the icing sugar and ginger juice to get a thick mix. Heat on low flame to liquefy. Turn the cake upside down and drizzle the glaze over the cake.
