Here’s my super delicious boozy brownie recipe that is like mixing all the sins of the world in one delicious mouthful….chocolate….booze and fudgy yumminess…..its like eating a cocktail…
1. Preheat the oven to 180 degrees C. Line a square or rectangle tin with foil.
2. In a heavy bottom pan..melt together 100g of butter and 100g of chopped cooking chocolate. Go for dark chocolate.
3. While this cools, beat together 4 eggs, 250g castor sugar and a tsp of vanilla essence.
4. Add the booze of your choice now. I used 3tbsp of Kahlua and 2tbsp of vodka. You can use strong black coffee in place of the Kahlua and replace vodka with rum or whisky.
5. Now add to the chocolate and butter.
6. Separately sift together 150g flour and 1/4tsp baking powder. Beat into the chocolate mix. Add a handful of chopped walnuts if you want to.
7. Pour into the baking dish and bake for about 20 min….give or take. The brownies should be just firm to touch. Do not overcook.
8. Allow to cool completely and then cut into squares. Sprinkle icing sugar on top through a sieve. Serve.
