Today is World Egg Day. If someone were to ask me to pick one food that I cannot live without, it would have to be eggs. So versatile, so easy to cook, so fast and so nutritious. To celebrate World Egg Day, I decided to make something I have not done before – Shakshuka. Popularised by the Israelis, this mid-eastern egg dish is perfect for breakfast, lunch or dinner. It is a one-pot dish and te beauty is that there is no “authentic” recipe. Every home makes it their own way. It is basically a spicy tomato sauce with eggs cracked directly into the sauce and cooked in the heat of the sauce. You can vary it according to taste and what you have in your fridge. I can see it getting a boost with an addition of chorizo sausages, prawns, cooked chicken, smoked salmon, tofu, paneer…like I said…anything that is in your fridge. So try Shakshuka your way and celebrate eggs.

Shakshuka…my contribution for World Egg Day…the yolks are not showing because I have sprinkled some cheese on top that has melted.
Here’s how to make this super yum and super easy mid-eastern every meal dish…
1. Heat some oil.
2. Sauté some garlic, onions, capsicum.
3. Add dry spices..coriander powder, cumin powder and some red chilli powder.
4. Add some skinned and chopped tomatoes or tomato puree and cook down till you have a nice sauce. Add some sugar and salt to taste.
5. Crack as many eggs as you want -four to six- and cover. Let it cook on a low flame till done. I added some grated cheese as well.
6. Can’t wait to dig in.
